Sunday Recap and More Pumpkin Creations

Check out the cool shirts we wore at the walk for juvenile diabetes! Doesn't my mom look so pleased to be photoed in such a cool t-shirt?! haha We walked for Sarah's team. Sarah is a young girl who goes to the school where my mom is the school nurse. Her team name was "Sarah's Super Striders!".
The walk was a hit. I believe there were about 5000 people that showed up, but that's a random guess really. Here is the back of the shirt, which addresses the fact that all proceeds from the walk are for the Juvenile Diabetes Research Foundation.
I hate to be such a downer sometimes, but I was slightly disappointed to see that some of the booths that were at this event were handing out tons of candy. Now I realize juvenile diabetes isn't always about weight, but still, aren't we supposed to be pushing health and wellness?? They were also handing out apples and bananas, which was great. Of course, why should I talk? I made this Saturday night:

Pumpkin and Walnut Frozen Yogurt
This was better than my first batch. Instead of using pumpkin spice, I used cinnamon and nutmeg!
After the walk for juvenile diabetes, I came home and tried out some tuna with Laughing Cow cheese, which was recommended by Lindsay of Banana and Chocolate.
As you can see I also added some marinated mushrooms and red pepper, as well as some pepper spice. I made little appetizers with the cucumber. Overall, I really enjoyed this!
Yesterday I also made some Chocolate Chip Pumpkin Bread from Cooking Light magazine. As always, I made a few changes to the recipe in order to make it lighter and healthier. Here are some of the changes I made:

I used about 2 T less sugar
Substituted 12 T flaxseed for 1/2 cup oil
I did not have any pudding so I used fat free yogurt
Substituted whole wheat flour for white
I used walnuts instead of chocolate chips
The bread tasted amazing, and was about 50 calories/slice less than the original, plus it had some ALA fatty acids (essential Omega-3 fat).

Taste of Grandview
Last night my mom and I went to the taste of Grandview with Nick's mom and sisters. Nick was working at the event, so we got to see him too :)

Here was the main meal I got, which was a flank steak with a palenta cake, roasted tomatoes, and fried leeks. On a scal of 1 to 10, this was a 9.5!
We also got some appetizers. A restaurant called Third and Hollywood was selling half artichokes, hollowed out and filled with a mayonnaise/bacon/dill sauce. They were AMAZING.
The artichokes were grilled, check it out!
And of course we had to try some pumpkin bisque! It was ok, not the best.
Question: What was the last new food you tried? Did you like it? For me it was fried leeks. I had never had them before and they were so tasty! They were basically like mini friend onions....so obviously they were delicious.

I'd love your recipe for pumpkin ice cream! I am always on a pumpkin kick. In fact, yesterday I made a pumpkin/apple soup. It was fabulous, if I do say so myself! ;-)

I wish I can taste your pumpkin ice cream!!! it looks amazing!!! and for a pumpkin/squash lover as I, I can't believe that I've never tried pumpkin icre cream yet!!! :D

new food? mmm...... I don't remember... I should try something new then! :(
unbake food? interesting idea! I'm heading over Special K's. :)

I'm very surprised to hear they were handing out candy at a walk for diabetes. That's just...odd.

Something new that I've tried and liked recently...hmmmm....I had some octopus at a sushi restaurant a few weeks ago. It didn't taste like much of anything. I was disappointed.

The walk sounds like a success! How great. The candy handouts are a bit odd though? Oh well, at least it was balanced with some free fruit! To be honest, I havent tried anything crazy lately! Just call me boring.. lol NOW I feel like I should!

Sounds like the Walk was a success! I am glad to hear that =).

The last new thing that I tried was Zucchini Fritters and the jury is still out...I need to give it one more chance before I can make my mind up ha

Ohhh my favorite unbake item is No Bake Cheesecake! I make this for ALL the holidays ha

The walk sounds great...but yeah kind of weird that they would give out candy at a walk for diabetes!

Your pumpkin ice cream sounds amazing too! And those artichokes! Yum!

When I went running this weekend, there was a walk to raise awareness about water conservation issues. They were just setting up booths when I was leaving, but I walked around for a bit...and saw a bunch of the booths stocking up with bottles and bottles of water. I am very anti-bottled water (LOVE my Brita and Nalgene!) so I was like ummm...ok guys!

New food...well I've recently gotten to like eggs so that's been a huge one for me.

Yum.... the grilled artichokes look so good! What is it about grilling that makes food taste SO GOOD?!?!? You're right about the candy thing.... it does send a mixed message! Other than that I'm glad the walk was a success! :D

I'm glad the walk was a success! But I do agree, booths with lots of candy don't make a lot of sense...

I just got some pumpkin butter from Trader Joe's for the first time and had it in my oatmeal for the past two days. Soooooo good! And to think that I didn't use to like pumpkin!

That's great that you participated in such a great cause. And even better that you got to do it with your mom! I love any activity I can do with my mom.

There's so much ice cream making going on in the blog world! I need an ice cream maker too! But then, it's getting colder out. Maybe next summer...

i think i would have been annoyed to see candy at a diabetes event as well.. that is a bummer! i think an event like that would be about promoting the total healthy lifestyle..

the pumpkin ice cream looks delish..

ooooh I LOVE the looks of that pumpkin chocolate chip bread. pretty much anything with the word pumpkin in I'd be down for.

you should serrrriously consider opening a pumpkin ice cream shop :) I'd come!

First off your mom is super cute! Secondly, I just realized why I missed your ice cream post... I hadn't discovered the blog world when you wrote that post. Oh, how I wish I could squeeze another kitchen appliance into my teeny tiny kitchen. Probably better off, cause your pumpkin ice cream recipe could ruin my career. ;)

they were handing out CANDIES at a walk for diabetes? What is this? They don't want their participants to come back when THEY get diabetes? This is so freaking ironic. >:-(

pumpkin walnut froyo...oh, be still, my heart. When can I come over?!!

The last new food I tried....hm....granola? I liked it, but I overdid it and now the thought of granola makes me sick...hahaha! classic sophia!

hmmm the last new food I tried I think this would be mussles and NO i did not like them haha...the texture just did not do well in my mouth! but i did try, right?

We used to always do the JDRF walk at our hospital, but lately - we've had to choose and narrow down our walk/run participation a bit because there are so many good causes!

And, yes, it's always a good question? Candy at a walk to promote health/wellness?? I could probably argue both sides.

Mmmm, your pumpkin frozen yogurt looks beyond amazing...

The photo of your mom in her t-shirt is too awesome! :-) I completely agree with you about the inappropriateness of candy at the event... Seems strange...

Ooooh, fried leeks sound incredible!! I love anything and everything with leeks...

Most recently, I tried a savory applesauce with garlic... I thought it was going to be SO gross, but it was actually very tasty, with a sweet-tangy-spicy combo that surprisingly worked... Go figure! :-)

P.S. Belately, I'm SO glad that Zach and I aren't the only ones with pet names for eachother! :-) Yay! :-)
