Cooking with Mom!

Last night was a night of cooking at my parent's house. My mom and I slaved over the stove to produce this amazing dish:

Ok, it took us 20 minutes, so it was actually quite easy to make! The most difficult part was chopping the onion. I even wore sunglasses in an attempt to prevent the eye burn, but nothing ever works.
The recipe is Pomegranate and Walnut Chicken and it's from Rachael Ray's magazine. I'm not a huge fan of Rachael ray (ahh, don't hate me!) but maybe I haven't give her a fair chance. This recipe was perfect for the fall, as it contained many fall flavors; cinnamon, onion, walnuts, and POM juice. It called for cranberry-pomegranate juice, but I still had three bottles of plain POM left, so I used it! This dinner was fabulous, and I rated it 9 out of 10 (it was cheap, and easy to prepare, plus the flavors were perfect.)

On Friday I made chocolate peanut butter frozen yogurt. I used the basic recipe that you can find on the right column of my blog, then I added about 2T natural peanut butter and about 2 T unsweetened cocoa powder. I liked it a lot, but Nick said he misses the pumpkin. I need to find more!! All local groceries are still out of it :(
If you haven't noticed, I make frozen yogurt/ice cream quite often. I didn't used to purchase organic half and half, but since we clearly go through a lot of frozen yogurt/ice cream, and thus a lot of half and half, I have been using organic half and half lately.

I don't buy everything organic, but I try to buy organic dairy and meat products, as well as certain "dirty" fruits and veggies (strawberries, spinach, lettuce, apples).

I'm still continuing on my mission of finishing all the random bars/other snacks I have in my cabinets before buying any more snack food. So yesterday I tried this:
It was really good, but I think I'd rather eat my granola for 180 calories! Or heck, I'd rather eat a buckeye (chocolate covered ball of peanut butter, in case you aren't form Ohio :) )
Question: Do you still cook with your family? What was the last great meal that you cooked with them, or on your own?

So today is another rainy, crappy day here in Columbus. Everyone's in a good mood though because yesterday we slaughtered Illinois. They didn't even score ONE POINT! Muahaha. Today I plan on working out, walking to Kroger for bananas and other fresh produce for the week, practicing a couple presentations, reading my new book (called Comfort Food, by Kate Jacobs), then watching the premier of The Amazing Race!!

cooking with Mom is one of my favorite things to do in life! I'm lucky to have her here with me now so we cook together all the time! :) She wash, chop and I cook! :)

I don't cry when i chop onions because I wear contact lens! :D

I heard that pumpkin will be more widely available now- last years crop was a flop, but they are canning this year's and say it will be better.

I liked that Luna though I used it crumbled up instead of granola in a parfait! Was awesome...

I cook with my mom occasionally- we'll be doing something next weekend since I am staying at her place so she can drive me to the airport on Sunday!

ohh i ALWAYS cook wiht my mom, I love it because she is always teaching me something new I never knew before. She is an amazing She is big on making her own marinades for chicken and such and every time they are sooo good. I ask "mom, what are the ingredients" and she always responds "iI have no idea!!" haha

that pom chicken looks fabulous! what a great way to use pomegrantes!

I love cooking with my mother too. There's just something about it. And I hear ya about crying with cutting onions. I'm fine if I have my contacts on but if I have glasses, forget it. I look like I just watched the end of Steel Magnolias. lol

That chicken sounds amazing!

I still cook with my family when I'm home, they like the dietitian to cook so they don't feel so guilty enjoying the food. People are always self-conscious about eating in front of RD's...silly folks!

And yep, OSU won...did you think they wouldn't? : ) True to my orange and blue, though!

You are the second person who has mentioned grocery stores being out of pumpkin, now I have to check. I am still working through the pumpkin I opened last week. I hope its not gone though, this is pumpkin season!

I really want to get an ice cream maker, I need to try out all your fun recipes!

Looks like you and your mom made a delish meal. :-)

Umm, I really want some of that frozen yogurt! Ok, so I think I figured out that the problem is in the top of the icecream spinner...the lid that attaches to the paddle. It somehow gets stuck and won't spin around. I'm going to try to troubleshoot it a bit more, but maybe I'm not attaching the paddle to the lid part right?

I don't really cook with my mom anymore. When she has me over I'll come and talk to her while she cooks or vice versa.

That dish looks amazing though!

That does look like a great Fall dinner! (I don't care for Rachel Ray much either but I agree, I'm not sure that I've really even given her a chance).

I heard that the shortage on pumpkin should be over soon and that stores are supposed to be getting more ... hopefully I heard right ; )

Nope- you are right I can't eat that kind of dessert without a tummy ache haha. I only had one sip of Eric's beer float and I ate only about half of my dessert. My stomach was not thrilled after but I was going to bed anyway so it was okay.

There is nothing like cooking with family. Nowadays though when I come for the holidays, I cook for them! You know I'm not a fan of Rachael ray either.

FUN FUN FUN to cook with mom! Maybe even better to cook with mom than a real chef, because you can hug her whenever you get a burst of affection. lol.

I have pretty much the same philosophy on organic groceries. I don't cook with my family since they live 4 1/2 hours away ...in Illinois ;)

I miss having food with family. Being single in Las Vegas, I tend to eat out a lot.
I love Columbus the one time I was there for a football game Ohio State versus Michigan, crazy.
Never had a buckeye, I have to try that next time I go there. Sounds very good!

Mmmm, the meal you fixed with your mom sounds so gorgeous!! I love the idea of POM chicken! Wow!

I love cooking with my Mom - when I was growing up, my all time favorite activity was cooking with my mom and grandma - all 3 generations in one kitchen, good-naturedly arguing about the best way to slice a potato... :-) I haven't seen my mom since last Thanksgiving, but I know this Thanksgiving I'll get to cook up a storm with both my mom and Zach's mom - I can't wait! :-)
