Beware Of Spider!

Happy Monday!! Today is my first official day of my new job. I never thought I would be excited about starting a job, but I am :) I'm not full time yet, but hopefully if we build the business well enough, I will be soon.

So yesterday, my "kitchen prep day", I prepared some vegetables for the week, including marinated mushrooms, another batch of the delicious kale, and then some cauliflower patties! I like cauliflower, but Nick hates it. I found this recipe in a magazine I was reading and I thought it might be a good way for Nick to try some cauliflower, and maybe learn to like it! If you are interested in this recipe, click the link above (same with the kale). It was easy to follow and only called for a few ingredients.

I first softened the cauliflower by boiling it, then mashed it up as well as I could.
After seasoning the mash and adding some flour (I used whole wheat instead of white) and 1 egg (enriched with DHA), I hand-pressed them into patties and put them on a hot skillet with a bit of EVOO.
The end product was actually really delicious. Nick would only try them if he was allowed to have ketchup. Obviously that was fine with me, and to my surprise he liked them! They actually did taste really good with the ketchup. Does anyone else get serious gas when they eat cauliflower? Yikes. I had to take a couple Beano before I ate these.
After about an hour and half in the kitchen, I grabbed this all purpose Green Works spray, which I recommend to those of you who are into the "all natural" cleaning supplies. I just bought it for the first time about a week ago and it works REALLY well! I'll admit, I don't insist on buying all natural, environmentally safe stuff, but this was cheap, so why not?
Question: What's your favorite fall fruit or vegetable? Do you have any clever recipes that you use to make a not-so-popular fruit or vegetable taste better?
I'm hoping my mom can use this new cauliflower recipe with my 13 year old brother, who seems to be living off of Subway, Chipotle, and Donatos lately. Is this what happens when you have a child later in life?! My parents NEVER used to let me eat that crap as much as Joe does! I consider myself lucky.

I saved this for last. Meet our first pet, Billy! He's stuck between our screen and our window, and I swear if he gets out, I will have a heart attack. Nick is too scared to kill him, haha, great help!

Yikes! I am not scared of spiders, but never seen one quite that size! Do you have a spray or a brave neighbour? Lol.

Veg- I think roasting veg makes them taste amazing. Brings out a sweetness almost? I hates brussel sprouts until last year when I halved them, sprinkled with salt and pepper and roasted/baked until crispy. SO good. Now I love them. Ketchup is awesome with every vegetable though ;)

I saw that recipe, too and thought it looked interesting. I am glad you tried it and liked it. Now I will definitely make it! Good call on the whole wheat flour!

The cauliflower patties sound great! I love making veggie patties. I also like pureeing veggies to add to soups, sauces, stews, etc. It's a great way to add flavor and substance without adding any fat. Plus you get all the extra veggies!

OMG... ewwwww to the spider pic!!!! the last time there was a spider in my parents house, i called my neighbor to come and kill it. he called my dad later on and they laughed at my for weeks.. in my little house, we get centipedes.. OH MY F-ING god.. lets not go there!!!

my fav fall veggie is the only and only SWEET POTATO. i love cooking them with apples and a nice honey maple glaze.. mmmmm

Eeek! I'd be scared too! Hubby is the big killer at out house. I don't go ANYWHERE near them! I love the way those cauliflower patties look! I've made similar ones from potatoes and zucchini... I'm totally trying cauliflower! Oh and I love ketchup on EVERYTHING!!! I even put it on salad!! It's so rich and delicious! Have a GREAT first day at work!!! Tell us all about it!!!!!

Thanks for sharing your pet spider. Ours was a St. Andrews cross and we named him Andrew, but my landlord sotra got rid of him when he was over cleaning the yard for our bull fight. Oops!

My fave fall fruit is apples and pears. I eat them year round, but it reminds me of cider and Halloween.

Ah scary spider!!! Love the cauliflower idea! Is it true that boiling the cauliflower gets rid of some of the nutrients though?

My favorite fall vegetable is sweet potatoes! Love apples too hehe. Good luck with work!

OMG that spider...I would FREAK out. I think my favorite fall veggie is winter squash...we get all kinds of random ones from my CSA and it's fun to experiment with new recipes.

Wow, your cauliflower patties look incredible!! Bravo to you for coming up with a creative way to help Nick enjoy cauliflower! He's so lucky to have kind, caring you fixing him healthful meals...

My favorite fall veggie is definitely winter squash of all kinds, but the only winter squash Zach likes is spaghetti squash, so I'll have to work on coming up with some creative squash recipes soon! :-) Do you think a similar concept would work for squash fritters? Zach does love anything with ketchup... :-)

OMG, that spider is HUGE! I like pumpkin and now like acorn squash - I've only made it as soup but think I'll try it with salt and pepper next time.

So glad you had a great first day, very exciting! I'm sorry if I missed it, but where/what is it? If you can't say that's okay :) mmm cauliflower what an interesting way to use it. I always like to roast or grill veggies to bring out their natural sweetness. I love any kind of winter squash. Oh my gosh, I would have died with that spider, it's HUGE!

Evidently no one is willing to admit to cauliflower gas, but I will. It is one of the top five most gas-inducing foods for me EVER! I like it, but generally avoid it for that reason.

I found a couple Beano before and steaming the crap out of it helped, but otherwise I just proceed with caution (sometimes a girl just needs her cauliflower--alone, at night, when no one else is around...)
